Cimal is produced from Tempranillo grapes that have been grown in vineyards on soils with a mixture of clay and sand with a high concentration of limestone and many small stones. The stones help to retain soil moisture during the long dry summer season.

Tasting
The grapes are harvested by hand and fermented with indigenous yeast. Cimal is aged for 6 months in American and French oak barrels and 2 months in bottle before release.
